Gluten-Free Flour Blend - I've made this recipe with Bob's Red Mill 1-to-1 Baking Blend. It's generally my go-to all-purpose gluten-free flour for baking.

Xanthan Gum - You only need to add this if your flour blend doesn't include it.

Brown Sugar - Brown sugar has more molasses flavor than white sugar, and it adds a darker color to the dough as well.

Cinnamon - A bit of cinnamon really makes these taste like old-fashioned graham crackers. Add extra if you prefer.

Baking Powder - To get flaky graham crackers, we need leavening ingredients. Baking powder is the first.

Baking Soda - Baking soda and baking powder work together to give us the perfect crispy texture.

Kosher Salt - Just a bit balances the sweetness in this recipe.

Butter - You want to use cold unsalted butter for this recipe, cut it into small cubes. Keep it in the fridge until right before you add it in. Don't use it at room temperature.

Honey - Honey adds a bit more mellow sweetness and moisture to the mixture.

Cold Water - Keep your water on ice until you add it in. The colder, the better.

Vanilla Extract - All good sweet baking recipes will have vanilla in them. Use your favorite gluten-free pure vanilla extract.

Parchment paper - This parchment paper works well; you can also get all sorts of pre-cut versions.

Rolling pin - I use the traditional wooden rolling pin but you can choose any type you like.

Pizza cutter - Use a pizza cutter to cut the crackers into the correct shape. You can also use a knife.

Cooling rack - It is good to use a cooling rack, so the crackers don't get soggy.

How To Make Gluten-Free Graham Crackers

  1. In a large mixing bowl, whisk together the gluten-free flour blend, xanthan gum (if your blend doesn’t already contain it), brown sugar, ground cinnamon, baking powder, baking soda, and salt.
  2. Cut the cold butter into the flour mixture until it resembles coarse crumbs, with a few pieces of butter the size of peas.
  3. Add the honey, 3 tablespoons of cold water, and pure vanilla extract. Stir until the dough forms. You may need to add an additional tablespoon of water to get the dough to form.
  4. The dough will be a little sticky. Wrap the dough and refrigerate for at least 30 minutes.
  5. Roll the dough out into a large rectangle, about 11x15 inches large. To do so, place the dough on a sheet of parchment paper and cover it with another sheet of parchment paper. Then, roll the dough with a rolling pin until it reaches the correct size. Carefully remove the top sheet of parchment paper. With a knife or pizza cutter, cut the dough into small rectangles, about 2.5x3 inches in size.
  6. Poke holes in each of the rectangles with a fork.
  7. Bake as directed in the recipe card below until the edges are slightly brown and crispy. Remove the pan from the oven and immediately slice along the score marks.
  8. Let the graham crackers cool in the pan for 10 minutes before moving them to a wire rack to finish cooling.

Tips And Tricks For Making Gluten-Free Graham Cracker

  • The method used in this recipe is very similar to a flaky pie crust recipe. We are making the dough by cutting cold butter into flour, creating the texture that makes these graham crackers crisp up.
  • When scooping the flour out of the bag into the measuring cup, use the back of the knife to level off the top of the measuring cup.

    • This recipe makes smaller 2.5x3-inch graham crackers. You can make larger graham crackers if you would like.
    • If you like a softer graham cracker, cook the dough closer to the 13 minute mark. If you like crispier graham crackers, cook them for 15 minutes.
    • It’s imperative that you let your dough chill before rolling it out otherwise it will be very sticky and difficult to work with. A minimum of 30 minutes in the refrigerator is required, but longer is better.
    • If you use salted butter, omit the salt.
