I’m a huge fan of gluten free doughballs when it comes to eating out at Pizza Express – so as we enter the fourth week of lockdown I decided to create my own gluten free CHEESY doughballs!

Made with justthree ingredients and, wait for it, no yeast(!!) these gluten free doughballs are probably the easiest thing to make on the planet.

Not only this but they taste INCREDIBLE. And it’s not just me saying that. The other half said, and I quote, ‘these are better than Pizza Express’. And he means the Muggle version too!

A gluten free doughball recipe with no yeast?

Yes, that’s right – these babies don’t require any yeast. Which is a blessing considering it’s damn near impossible to buy any in the UK at the moment.

I’ve already been working on some yeast free bakes such as my easy and quick gluten free soda bread (which you simply MUST try by the way).

And of course my gluten free flatbreads too which are similar to this recipe.

And really when you find out what goes into these, prepare to have your mind BLOWN. Because this recipe only requires three ingredients – and obviously one of them is cheese.

The other two are fridge and cupboard basics which hopefully most people will either have, or be able to get hold of.

What do you need to make gluten free doughballs?

That’s right, all you need to make my gluten free cheese doughballs (aside from cheese) is self-raising gluten free flour and yoghurt!

In fact, the exact quantities and ingredients you’ll need are:

  • 300g self-raising gluten free flour (such as the FREEE or supermarket own ones)
  • 300g natural yoghurt
  • 75g mature Cheddar (grated)

And if you want to make these extra special, you’ll also need:

  • 20g melted butter
  • 1/2 tsp garlic paste

Mix this together and it makes a dreamy dip for your warm-from-the-oven doughballs, or brush it on top of them for an extra flavour dimensions.

This genius combination has been doing the rounds on the internet for years, but most people use it to make flatbreads or naan breads (which are also amazing, FYI).

It’s a combination that I’ve used for a long time, but today I stopped and thought – what if I used this to make gluten free cheesy doughballs?

And the results, I must say, are just INCREDIBLE.

What if I don’t have all (three) ingredients?

Well, if you don’t have the cheese, these certainly won’t be gluten free cheesy doughballs! However you can still bake these as plain gluten free doughballs without the cheese.

Either serve them plain with a yummy garlic butter dip, or add some garlic granules to the mix to give the doughballs themselves some flavour.

If you only have plain gluten free flour then you’ll need to add 3 tsp baking powder to the mixture to give the gluten free doughballs some rise.

I use a self-raising gluten free flour mix which is a blend of flours – if you only have a specific flour such as coconut or almond flour, I’m not sure how these would turn out.

In terms of the yoghurt, if you only have Greek yoghurt this will work too, though you may need to add a little extra to the mix.

Greek yoghurt is thicker than plain natural yoghurt so you will need a little more or the mixture will be too stiff – I’d recommend adding this 1 tbsp at a time to find the right consistency.

If you want to make thisdairy free, you’ll need to use a dairy free yoghurt such as coconut yoghurt, and a dairy free cheese.

I’ve personally not tried this so can’t vouch for the results but having seen many other ‘yoghurt + flour’ recipes which use dairy free yoghurt, I’m confident this would still work fine!

Whether you want a snack or a feast, these gluten free cheesy doughballs are a recipe you just HAVE to try.

They’re just so quick and easy and I can’t believe I haven’t tried it before. I’m going to be making this over and over again.

Gluten Free Cheesy Doughballs (No Yeast)

Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 25 minutes

These gluten free cheesy doughballs only need 3 INGREDIENTS to make and are super easy. Quick to bake and no yeast necessary - the perfect gluten free snack.

Ingredients

  • 300g self-raising gluten free flour (see notes)
  • 300g natural yoghurt
  • 75g mature Cheddar (grated)
  • 1 tsp salt

For the topping/dip:

  • 20g melted butter
  • 1/2 tsp garlic paste

Instructions

  1. Preheat the oven to 200'C/ 180'C fan/ Gas 6. Line a baking tray with a sheet of baking paper and set to one side.
  2. Add the yoghurt, cheese, gluten free flour and salt to a large mixing bowl. Use a spoon or spatula to start to mix the ingredients together - as it thickens into a dough, use your hands to bring it all together into a dough.
  3. Break the dough into pieces weighing approx 50g each, roll them into a ball and then place on a baking tray, with a few mm between them.
  4. Bake in the oven for 15-20 minutes until crisp and golden on top. Remove from the oven. Mix the butter and garlic paste together and either brush this over the hot doughballs or serve it as a dip on the side.

Notes

  • If you don't have any self-raising gluten free flour, you can use 300g plain gluten free flour plus 3 tsp baking powder instead. If your gluten free flour blend does NOT contain xanthan gum, you'll also need to add 1/2 tsp of xanthan gum to the mix to help the texture.
  • These doughballs are best eaten hot from the oven. They can be frozen and reheated when desired.
  • The dough consistency can depend on which yoghurt or flour you use. If the dough is too sticky, add a tiny bit more flour at a time. Too dry, add a tiny bit more yoghurt at a time, until you have the desired consistency.
